Peaches & Cream Quick Oats
Peach season is probably one of my favourite times of the year! Nothing like a delicious juicy peach! The creaminess of the oats and the peaches are the perfect combo.
½ cup gluten-free quick oats
½ cup coconut milk
½ cup water
1 peach – I cut half in smaller pieces to mix in while cooking and the other half in bigger pieces to add on top.
1 scoop of collagen peptides (I use Vital Proteins)
2 tbsp. grass-fed organic butter (you can use vegan butter or coconut butter)
Pinch of sea salt
1-2 tbsp. maple syrup
Hemp seeds (optional)
Coconut flakes (optional)
Add oats, water and coconut milk to a small pot and stir. Add in salt. Once it heats up a bit, add in the butter. Make sure to stir often.
Add in maple syrup and stir.
Cook for about 6-8 minutes.
When they are just about done, add in the collagen peptides, stir and then turn off the heat.
Let the oats stand for about 2-3 minutes.
Transfer oats to a bowl and add toppings.
