I don’t always eat peanut butter, but when I do, these bites are a go to.
They are super versatile - you can use any nut butter!
Here’s the recipe:
1/2 cup organic all natural peanut butter
1/2 cup coconut flour
2 tbsp. coconut oil
1/4 tsp. pure vanilla extract
1 tsp. maple syrup (you can add more if you want them sweeter, omit for no sugar or add some monk fruit sweetener)
Pinch of sea salt (you can add more)
1/4 cup mini dairy-free chocolate chips
Add all ingredients into a bowl (except chocolate chips) and mix until smooth. I mix with a spatula first and then get in there with my hands!
Fold in chocolate chips.
Roll into mini balls (I made 12 out of this recipe) and place on cookie sheet and refrigerate for about 30 minutes.
